Carlito’s Burritos Brings a Taste of New Mexico to Las Vegas
Carlito’s Burritos brings a new, piquant flavor to Las Vegas. Nearly everything on the menu—down to the
sopapillas (fry bread)—is prepared fresh on-site, from recipes collected by owner David Samuels, a native New
Mexican and graduate of the Cornell University School of Hotel Administration.
Since its opening in February of 2009, Carlito’s has rapidly become a “home away from home” for the hundreds
of New Mexicans who have settled in or near Las Vegas. “It’s like being in my mother’s kitchen again,” one New
Mexican “ex-pat” commented. “I haven’t had quesadillas like these in years.” The cheerful décor is also
reminiscent of the Land of Enchantment, replete with pictures and memorabilia from around the state.
Carlito’s opens at 7:30 am on weekdays for breakfast specialties like meat or cheese breakfast burritos, steak
and eggs quesadillas (crispy flour tortilla filled with steak, eggs, jack cheese and red or green chile) and huevos
rancheros (fried eggs topped with cheese and red or green chile).
Lunch and dinner offer a wide choice of burritos, plus tortilla burgers, tacos, enchiladas, quesadillas and Santa
Fe local favorite, Frito pie. For lighter fare, there’s tostada ensalada, a combination of salad vegetables and
green chile, tossed in a chile-lime dressing and served over a crispy tortilla. It can all be washed down with a
selection of soft drinks and juices, a good brew or a Carlito special Margarita. Carlito’s Burritos remains open until
9:00 pm, Monday through Saturday.
Located off-Strip in a lively commercial area just a few miles east of McCarran Airport, Carlito’s is a great place for
local businesspeople to stop by on the way to or from work or during lunchtime. The prices are very reasonable,
and for a limited time, anyone who shows a student ID, receives a free small drink with their meal. Carlito’s also
caters local parties and lunches. So the question is not whether to stop in and give Carlito’s a try. The only
