ONE Steakhouse inside Virgin Hotels Las Vegas, Curio Collection by Hilton, will serve a bold, memorable pairing to thank dads for all they do, available exclusively on Father’s Day.

The Father’s Day special will feature a braised 28-ounce bone-in short rib served with roasted truffle cream and potato purée, priced at $69. The recommended pairing for this rich, savory dish is a pour of Bardstown Kentucky Straight Rye whiskey, whose bold and nuanced profile pairs well with the deep flavors of the short rib.

Guests can celebrate Dad all weekend long and also toast to National Bourbon Day on Saturday, June 14, with ONE Steakhouse’s specialty bourbon cocktails. The Chicago Way is a bold, stirred cocktail made with Knob Creek Rye Bourbon, Carpano Antica sweet vermouth, Angostura orange bitters, and Bitter Queens sarsaparilla bitters, priced at $19. At the same time, the Barrel Aged Old Fashioned is a blend of Knob Creek Bourbon, Solerno Blood Orange liqueur, Cherry Heering, and Angostura bitters, priced at $21.

ONE Steakhouse’s complete menu will also be available. Known for its premium cuts, the restaurant offers a curated selection of expertly prepared steaks, including filet mignon, available in a variety of weights; an 8-ounce flat iron, priced at $39; and an 8-ounce hanger steak, priced at $42. Larger cuts, ideal for sharing, include a 32-ounce double porterhouse, priced at $159, and a 32-ounce tomahawk finished with a roasted chili rub, priced at $179.
